National Day Special: Singapore, Served Again
Spanish meets Singapore in this National Day special, born from our culinary team’s exploration of the Spanish pantry. The dish reinterprets "Chai Boey" — a cherished mustard green stew rarely found beyond the home, traditionally made with roast meats, dried tamarind and chillies.
Grilled Presa Ibérica is served with a Chai Boey-inspired emulsion made from house-made pancetta, Ibérico pork stock, dried tamarind, dried chillies, and mustard greens — a nod to the familiar sweet-sour depth of the beloved stew. Accompanied by Acquerello rice and baby gem lettuce.
